Spicy Quorn and vegetable fajitas

A great comforting Saturday night meal that’s cheap and easy to make. How healthy it is depends on how much cheese you decide to add, and how many of the sweet potato fries you decide to scoff…

Note: I’m writing this retrospectively, so the quantities may be a bit hazy. But the process is fairly basic and  intuitive and I wing it all the time, so I’m sure you’ll manage. Just keep tasting as you go along).


200g Quorn mince (frozen or chilled)

1 onion (white) sliced

1 fresh chilli (green or red) finely chopped

1 red pepper, sliced

1 green pepper, sliced

2 or 3 fresh tomatoes, chopped

Paprika (to taste,approx 1tsp)

Cayenne pepper (to taste, approx 1tsp)

Ground cumin (approx 1tsp)

Salt and pepper

2 sweet potatoes

Tortilla wraps

Grated cheddar (to taste)

Salad leaves such as watercress to dress

Fry the sliced onion and peppers in a little oil until softened.

Add the fresh chilli, then the Quorn mince, and fry for a couple of minutes.

Add the tomatoes and the spices and fry, seasoning to taste.

Cook on a medium-high heat for around 20 minutes.

Towards the end warm you tortilla wraps in the oven, prepare a little green salad and finish off your sweet potato fries.
